Two brothers and a sauce obsession

The chicken I could only get at work

Two brothers who couldn’t leave a sauce alone.

I worked in an office in central London, and downstairs was a Peruvian chicken spot I got obsessed with. The catch was I could only get it there. Leave the office and it was gone.

Around the same time my brother came back from New York still going on about the white sauce off the halal carts, recipe in hand. So we started messing about in the kitchen. Me chasing the green sauce I missed from work, him building on the cart sauce from New York. Cooking, tasting, arguing, cooking again.

We’re not chefs. We just couldn’t stop until the box tasted like the one worth queuing for.

Then the Peruvian Thigh sold out in three hours on a Monday. That’s when we knew.
